Bread crumbed fish with girolle sauce
This is fantastic combination of see and forest food. You would be surprised how they perfectly fit together!
For this dish you’ll need:
- 4 fish fillets – in this recipe I often use zander because it has a very subtle flavor
- 1 egg
- 4 tbsp. crumbs
- 8 oz. girolles
- 3 onions
- 1/3 tsp. colored pepper
Wash girolles on a strainer and pour them with hot water. Then dice onions and fry them until it’s granulated. When it’s ready, mix onion with girolles and fry for a while. Add some salt and pepper.
Now it’s time to prepare fish. Stir an egg with a bit of salt and minimum amount of warm water. On a separate plate prepare crumbs. Dunk fillets in egg and in crumbs next. Place it on a hot frying pan with oil. Fish should be fried onmedium heat until the crumbs becomes brown.
The difficulty here is that both fish and girolle sauce should be hot at the same time.
Decorate it fish with sauce and serve immediately.
It tastes great with small potatoes and baby carrots
