Curry chicken and broccoli salad

I love broccoli, chicken, salty taste of Feta cheese and spicy curry :)  I discovered this mix being in salad restaurant some time ago and I immediately tried to do it myself at home. It was even better! ;))

For the salad you’ll need:

  • 1 broccoli – hard boiled
  • 2 chicken breasts – grilled
  • 1/2 pepper – diced
  • 5 low-salt pickle cucumbers – diced
  • 1 can of corn
  • 1 Feta cheese pack  (Greek salty cheese) – small cubes
  • 1 small onion, can be red onion – diced
  • curry sauce

How to prepare broccoli:

Wash broccoli and separate it into small florets. Throw it on boiling water with 1 tbsp. of salt. Boil for 6-7 minutes. Put in on a strainer and wait until it’s cooled and dry.

How to prepare chicken:
Marinate chicken breasts using curry powder and pepper. Pack them separately in aluminum foil and bake in oven in 320°F for 45min. I usually do it a day before in the evening to ensure that meat is cold when adding to salad. When you’ll be cooling in overnight, leave the chicken in foil – it’ll be more juicy then. Chop meat into medium cubes and add to salad.

To combine all ingredients you need a sauce:

  •  1 small cup of light sour cream
  •  3 tbsp. mayonnaise
  •  1 tsp. curry powder
  •  some pepper

Mix all ingredients in a bowl and put to a fridge for an hour (if you’ll be able to do it, I usually eat half of it immediately! ;)
