Peach and mozzarella salad
Not really a long time ago I used to shudder at the thought of mixing fruits with salty things. Now… I’m crazy about inventing recipes containing fruits as ingredients :)
This time I wished to try a salad with peaches. I wanted it to be crispy, light and without any white sauce. My idea was to utilize somehow the syrup form peaches can… of course just as a base ;) Here is my recipe for a great peach and mozzarella salad.
There are not so many ingredients in this salad:
- 2/3 can of peaches – medium parts
- 2/3 can of corn
- 1/2 iceberg lettuce head – teared
- 1/2 red paprika – diced
- 1/3 leek – half sliced
- 8 oz. mozzarella cheese – diced
- peach-mustard sauce
Peach-mustard sauce ingredients:
- 1 tbsp. olive oil
- 5 tbsp. peach syrup
- 2-3 tbsp. mustard (add more for more intensive flavor)
At first half slice 1/3 leek and salt it to make it soften. Then chop peaches and mozzarella into medium-sized pieces, dice paprika and tear iceberg lettuce. Add 2/3 can of corn.
Now prepare the sauce – mix olive oil, peach syrup and mustard. It would be good to try it now and make some adjustments to your taste ;) The sauce will be the most distinct part of the salad as the rest of ingredients are very delicate.
The salad is ready immediately after mixing it with the sauce.
