Pineapple and curry chicken salad

I like this salad very much, not only because it’s delicious, but also because it’s very quick to be ready :) For my home purposes I usually call it Hawaiian salad :)

You just need to mix together in a bowl:
•    1 can of corn
•    1 can of pineapple in pieces (or you can cut if yourself)
•    ½  leak, sliced in half rounds
•    7 oz. of hard cheese, can be a little bit sweet – diced
•    ½  normal size chinese cabbage – chopped
•    2 chicken breasts – grilled
•    Curry sauce

How to prepare chicken:
Marinate chicken breasts using curry powder, pepper and salt. Pack them separately in aluminum foil and bake in oven in 320°F for 45min. I usually do it a day before in the evening to ensure that meat is cold when adding to salad. When you’ll be cooling in overnight, leave the chicken in foil – it’ll be more juicy then. Chop meat into medium cubes and add to salad.

To combine all ingredients you need a sauce:

  •   ½ small cup of light sour cream
  •   2 tbsp. mayonnaise
  •  1 tsp. curry powder
  •  ½ tsp. pepper
  •   Salt – as you like

    Hello excell123,
    well, the original recipe contains low fat sour cream but you can always use yogurt instead :) Mayonnaise is also not necessary. When you change this two things I’d say that this salad is light as the chicken is baked and not fried as well ;)
