Pork rolls in tomato sauce

This is a proposal of a pork served in light way. The amount of work is not so huge and the effect is nice :)

To prepare 6 rolls you will need:

  • 20 oz. pork chop
  • 6 slices of hard cheese
  • 6 slices of ham or bacon
  • spicy marinade for meat
  • 1 cup half-sliced onion
  • 10 sliced champignons
  • 1/2 tbs. vegeta
  • 2 tbsp. olive oil
  • tomato sauce

Slice pork into 6 pieces and tenderize them so that they are thinner and bigger. Marinate each slice with some spices and olive oil. Fry onion for 7 minutes and add sliced mushrooms then. Fry all until most of water is evaporated. Add vegeta, salt & pepper.

On each piece of meat  put a slice of ham, cheese,  fried onion and champignons. Roll it and put protruding part on the bottom. Use toothpicks or string if it’s disintegrating.

Tomato sauce consists of:

  • 1 cup tomato concentrate
  • 1 cup sour cream
  • 1 cup water
  • 1 bouillon cube
  • 1 tbs. oregano
  • pinch of pepper

 

Combine water with tomato concentrate. Then slowly add it to sour cream and mix carefully. Add oregano and bouillon cube dissolved in minimum amount of hot water.  Pour it on rolls and put them into oven in 300°F for an hour. Rotate the rolls at least once during baking so that they will not dry up.

The check if the meat is ready, prick it with a toothpick – if it’s dry and hot, the meat should be ready.

It tastes great with fresh vegetable salad with little dressing :)

If you like cheese very much, you can also apply some grated 10 minutes before the end of baking time.
