Stuffed chicken thighs
I think most people love chicken :) Its meat is white and very delicate. It doesn’t contain lot of fat, therefore it is recommended for people being on a diet.
This is a proposal for Sunday family dinner, as it requires a bit more work.
To prepare chicken thighs in a more sophisticated way than just simple baking, you’ll need:
- 6 chicken thighs
- 15 champignons – diced
- 2 onions – diced
- 8 oz. ham – diced
- 5 oz. hard cheese – grated
- 1 tbsp. crumbs
- 1 egg
- pinch of salt
- pinch of pepper
- pinch of paprika powder
- 1 tbsp. oil
The most difficult part of this dish is the beginning as you have to remove bones from thighs. In order to do this use quite long and sharp knife. Put it inside the thigh and move gently very close to the bone in circles.
Try to not damage the pocket for stuffing but don’t worry if you cut out too much meat – you can always put it back inside the pocket by using your fingers ;)
When it’s done, it’s time to prepare stuffing. Dice 2 onions and add them on a heated frying pan with 1 tbsp. of oil. Peel champignons, dice them and add to onion. At first braise it under a lid and when you notice that there is a lot of water, uncover the pan and stew it until whole water is evaporated. In the meantime dice ham – it’s best to buy it is slices – and add it on a frying pan. Fry everything together for 5 minutes, add some salt and pepper. Cool it down.
When a bit colder, add grated cheese, one egg and a table spoon of crumbs to it – mix. Apply the prepared stuffing into thighs pockets and place them in ovenware with lid. You can use tee spoon or your fingers to do this ;) Sprinkle chicken with paprika powder.
Insert it into a hot oven and bake in 300°F for 45min.
