Tartins with blueberries
I felt in love with all kind of tart and tartins from the first time I saw them :) For me they are like sweet and tasty work of art :)
I was inspired to invent this recipe after I saw such small tartins in a shopwindow of a confectionery whose sweets I always considered as very appetizing ;)
This is a recipe for 6 small tartins.
A tartin consists of:
- Shortcrust pastry
- Jam (I like strawberry) – 1/2 jar
- Blueberries (it will also be good with raspberries if you prefer)
- Jelly (can be strawberry as well ;)) – use 2/3 amount of water that is advised on its package – consistency of the jelly will be thicker
To make shortcrust pastry you need:
- 1,5 glass of flour
- 1/3 pack of margarine (3oz / 80g)
- 1 egg yolk
- About 2 tsp. of sour cream
- 1 tsp. sugar
- A pinch of salt
Mix everything together on a table-top and knead it until it’s flexible. Then roll it out using a rolling-pin. Cut out 6 circles using your small tarting baking tray. When ready, move it to baking trays smeared with a butter and put into a fridge for about 30min. After that time bake for 30 minutes in 280F / 140C. Take the tart out of oven and spread some jam on it.
- 1,5 glass of milk
- 1/5 glass of sugar
- 1 egg yolk
- 1/5 pack of margarine
- 1/2 glass of flour
Boil 1 glass of milk. To the remaining 0,5 glass of milk add sugar, flour and yolk – mix it. Add this to the boiling milk and mix until it’s thick. When a little bit colder, add margarine and triturate. Your worm pudding is ready to be put on the prepared pastry.
When it’s a bit cooler, decorate it with blueberries – I usually put a lot on one tartin ;) A final step is to pour thickened jelly on a tartin and put into a fridge for about 3 hours.
