Vegetarian broccoli salad
Broccoli are one of the most healthy vegetables. They have positive influence on heart and circulatory system. Apart from that, they are also delicious and that’s why I like them so much :) As their taste is rather delicate, I usually combine them with salty Feta cheese and sweet corn… mhmmm :)
Here is a recipe for vegetarian broccoli salad – it is a perfect salad for barbecue party :)
There are couple of ingredients you’ll need to make this salad:
- 1 broccoli – hard boiled
- 5 low-salt pickle cucumbers – diced
- 1/2 pepper – diced
- 1 can of corn
- 1 Feta cheese pack (Greek salty cheese) – small cubes
- 4 eggs - hard boiled, slices
- curry sauce
How to prepare broccoli:
Wash broccoli and separate it into small florets. Throw it on boiling water with 1 tbsp. of salt. Boil for 6-7 minutes. Put in on a strainer and wait until it’s cooled and dry.
To combine all ingredients you need a sauce:
- 1 small cup of light sour cream
- 2 tbsp. mayonnaise
- 1 tsp. curry powder
- some pepper
Mix broccoli, cucumbers, pepper, corn and Feta cheese in a bowl with curry sauce.
Decorate it with eggs’ slices and put into a fridge for an hour.
